Good news for System 7 users is that there's plenty of clients for either POP and IMAP. Here's our overview:

Mulberry 2.x
Released only in 2001, PowerPC-only client Mulberry handles both POP3 and IMAP e-mail reliably and offers solid options for customization. Usage is marred by a quirky and unintuitive interface. Last version compatible with System 7 is 2.0.8.

Musashi
Comes in 68k and PowerPC versions and offers a sleek interface. Supports POP3 / SMTP and worked right out-of-the-box with our SSL tunnel. Other features include multi-user support, multiple signatures per user and filtering. Yet it remains a small application and the 68k version runs smoothly even on older 68k Macs like the LC III or SE/30.

POPMail II
A black & white e-mail client for underpowered System 7 Macs like the Mac SE. It's bare-bones, albeit with beautiful 1bit icons and handles POP mail.
