I wonder if it has any relation to MacMame, a very popular (PPC I think?) emulator for PowerMacs that emulates arcade game systems that's the only one I'm aware of but it's been a good minute.. I believe there might even be a Cap-Com variant, too? All should be Mac OS 8-ish era, compatible up to 9, just do a search for these in the Garden; that would be my first suggestion, and see if they fit the bill (if you don't already have these or whatever they're actually called, of course) and if MESS has anything to do with any such emulators for that matter

A gotcha.. I do have a sweet spot for NES (having been somewhat part of my gaming era; it was a bit more arcade games) but I feel that at the time, their mother ship was fiercely protecting their stuff, so just a very few projects focused on emulating their 8-bit console possibly? But on PowerMacs, SNES was more the focus, as platforms all progressed quickly forward as chips got better, again, leaving the NES behind in its former glory, hence the lack of options I'm guessing
