Hi. I'm getting a PowerBook 3400c - 180 MHz - soon. It comes with 7.6 preinstalled, not 7.6.1 . Can anyone please describe the installation process? Thanks.

The PowerBook 3400 shipped with its own variation of System 7.6. A full 7.6.1 installer will install 7.6.1 on the Powerbook 3400. The PB3400 however does have its own 7.6.1 upgrade which will upgrade the version of 7.6 that shipped on the 3400. You can read about it and download the updater here. In any event, you will have a more stable system if you update to 7.6.1.

Be sure to look over the Important Updates page for more useful system upgrades for your 3400.

Thank you, but the process still seems a bit complicated to me. Could I still connect to my OS X file server and  Shared Printer with 7.6 and without 7.6.1? That's my biggest concern.

Yes I imagine you could connect to an OS X server with 7.6. This Apple Tech Note gives complete information on changes made by the update to 7.6.1. There are several changes that are specific to the 3400.

While conventional wisdom suggests that it is best to apply all the "dot" updates to an OS because they generally increase stability and usability, an individual does need to decide for themselves the benefits and liabilities involved in an upgrade.
