Classic Mac OS is kind of fun to use on a machine with a large enough display to support a decent resolution.   I'm running my old beige G3 in 1280x1024 now and Mac OS 8.6 doesn't look as blocky and old at this resolution.   The extra screen space (I was running 832*624 before) makes doing things in Classic Mac OS a lot easier too.   This is actually quite fun.

I have a Quadra 700 now that I'm upgrading to the nuts too.   It only had 8 megabytes of RAM and a 400 megabyte hard drive when I first got it.   I've upgraded the RAM to 20 megabytes and I'm on the lookout for some reasonably priced 16 megabyte SIMMs.   I want to max the RAM in this machine at 68 megabytes.

I've pulled the 400 megabyte hard drive in the Quadra 700 and replaced it with a one gigabyte model.   That should be plenty for running a few applications under Mac OS 7.6.1 on this machine.

The VRAM was already maxed out at 2 megabytes.  I wasn't happy with the resolution/color depth that the built-in Apple video could muster, so I added an old Rasterops Prism GT video card to one of the two available NuBus slots.

Other additions to the Quadra 700 include an external 12 times Pioneer CD-ROM drive and an external 9 gigabyte hard drive.   I have two other 9 gigabyte hard drives that I'm going to add to this machine too -- once I get a big enough case to hold three 9 gigabyte Seagate Barracuda drives.

The Quadra 700 is a really nice little machine that is a lot of fun to upgrade.   And getting stuff to add to the Quadra 700 has become really inexpensive, which makes it a great hobby.   And if you can find a practical use for the old girl, it's that much better.
