Hmmm..ok, so no sooner does the dual 604e 180 CPU card arrive at my door, but I see a G3 250 on ebay for a ridiculously low price so I sniped it and got it for $10!! I know generally I would be better off with the G3 but will it also run faster than the dual 604e 180's in apps that support multiprocessors??

Speed is a difficult to determine as it means many different things. A single thread runs on a single processor, even on a multiprocessor machine one tread on one processor. In that light for any given single thread it will run fastest on the fastest processor. In your case a single thread will run faster on a G3 250.

If you run two threads the a single processor can only run one tread after the other, while dual processors can run them both at the same time. So while the speed at which each tread runs is determined by the processor speed, generally  the two treads running on a dual processor machine will complete faster on a dual processor machine than on a single processor machine.

In System 7 through OS 9 there is very little support for multiple processors in the system itself. Applications that support multiple processors will run faster on multi processor machines, yet back ground task which are being done by the OS will not be getting any benefit and will work against speed gains from the application with dual processor support.

This is mostly new territory for our forum, so we look forward to reading your observations on the differences in performance you experience while working with your new processor cards.

Are there any benchmarking utilities I could download to test both CPU boards?? I really don't relish the idea of having to buy a full version of Photoshop 5.5 to find out as it is still expensive as outdated as it is.

Maybe you can use nPower utilities from Daystar technology to check your MP system.
This utility show dual system performance.

If you decide to go with the G3 processor card, would you be interested in selling the dual processor card?

I'm running Linux on a single 604 processor PowerMac, and dual processors for Linux would be nice.

No, sorry. I have so many Macs here that any spare parts that I have usually get used up pretty quickly.
