What would my options be for a 10/100 Ethernet card that is supported by 7.6.1??

It depends on your machine, is it a nubus or pci.  Most ppc macs have built in ethernet but a aaui transtitter is required.

Apple branded 10/100 PCI cards are compatible with OS 7.6 and are typically very inexpensive on eBay. Asanté has been a solid supporter of the Mac and I am sure their cards would either work or Asanté has drivers on their download site that would make them work.
